Mexican street corn, also known as elote, is a popular and mouthwatering street food in Mexico. Ingredients

  • 4 ears of corn husked
  • ¼ cup mayonnaise
  • ¼ cup sour cream or Mexican crema
  • ½ cup crumbled cotija cheese feta cheese can be a substitute
  • 1 teaspoon chili powder adjust to taste
  • ½ teaspoon smoked paprika
  • 1 clove garlic minced
  • 2 tablespoons freshly chopped cilantro optional
  • 1 lime cut into wedges
  • Salt and pepper to taste

Instructions

  • Preheat grill to medium-high heat. Grill husked corn directly on grates, turning occasionally, until cooked and slightly charred, about 10-12 minutes.
  • In a small bowl, mix together mayonnaise, sour cream or Mexican crema, minced garlic, chili powder, smoked paprika, and a pinch of salt and pepper. Adjust seasoning to taste.
  • Brush each grilled corn ear evenly with the sauce mixture using a pastry brush or spoon.
  • Sprinkle crumbled cotija cheese generously over each ear of corn. Optionally, sprinkle freshly chopped cilantro on top for added flavor.
